Charlotte’s Homemade Macaroni & Cheese
3 cups uncooked macaroni noodles
2 cans evaporated milk
2 tsp salt
3 tsp garlic powder
1 or 2 cups grated cheese (Marble or Cheddar)
2 Tbsp corn starch
1. Boil macaroni noodles until cooked. Drain & Rinse. Set aside.
2. Heat evaporated milk, salt, garlic powder & corn starch on medium heat until boiling. Stir constantly so the milk doesn’t burn.
3. When the milk thickens, remove from the heat and stir in the cheese.
4.Pour cheese sauce over the noodles and serve.
Kathy’s Sneaky Variation of Charlotte’s Macaroni Dish…add mashed white beans & cauliflower & they’ll never know!!!

3 Tbsp olive oil
2 onions chopped
2 carrots chopped
2 celery stalks chopped
3 potatoes chopped
SAUTE ALL INGREDIENTS UNTIL SOFT
1 can (28 oz) diced tomatoes
½ can tomato paste (3 oz.)
Any left over uncooked vegetables (zucchini, broccoli, cauliflower)
1 can (mixed beans)( kidney or chickpeas)
pepper to taste
Optional: oregano, basil, thyme or favourite seasonings
Bring to boil & simmer 25 minutes.
